I've never "bent the stick" on any balloons I've ever built.  With stations
every foot or two, you have plenty of data points to generate a pretty
smooth curve.  I think you probably end up adding more noise to the balloon
by not holding your seams exactly at the same width during sewing.

I take that back. On second thought it's actually MUCH MUCH better
performance in building the whole balloon because we "connect the dots"
with a "bent stick" along the gore curve. It isn't a true decimation.
